Squash!

Box day is my favorite day every two weeks! Quick recap on the previous box. The roasted, golden beets were kind of a flop. Eric thought they were potatoes and was disturbed when they did not taste like potatoes. I didn’t care much for them, either, and will stick to beets in salad form. I also just ended up eating the kiwis raw because I couldn’t think of anything creative to do with them.

This week’s box:
2 Fuji apples
2 Valencia oranges
1lb black grapes
1 bunch carrots
1 bulb fennel
3 loose leeks
1 crown broccoli
1 kabocha squash

I’ve already eaten one orange and some of the grapes for breakfast this morning. This afternoon, however, I went about using up a lot of the more unusual ingredients. I had just come across a recipe for a kabocha squash, fennel, and leek soup! How did my box know! So I made that soup for dinner tonight (and probably the rest of this week). Here is the recipe I used.

Really there is nothing I dislike in that recipe. However, this soup will not be a favorite of mine. I think I overcooked my squash initially, too, so instead of having chunks I basically ended up with puree. Also somehow the soup got incredibly spicy, and without chunks of the sweet squash to help out it’s just a very spicy soup. I think I just don’t like unsubstantial soups. I prefer chilis, stews, or soup with a lot of chunks of things. This soup is more brothy and the only “real food” are chickpeas and supposedly squash. Everything else is just a flavor booster like the leeks, fennel, garlic, and ginger, but they do not give you something to eat. Oh well! I use a whole bunch of my box all in one shot!

The broccoli that came in this week’s box is so gorgeous I just can’t wait to eat it! I’ve been meaning to take group photos of all my box contents, but I never remember to as I get so excited when I pull the food out. Maybe next time.

I’m planning to use the apples from my box in this cupcake recipe tomorrow. I know I just did an apple spice type bread, but this sounds amazing with the salted caramel frosting. Hopefully they will be as delicious as they seem!

This will be my last box for about a month due to Thanksgiving and the fact they we get them every other week anyway. I will probably still have food to discuss in that time, though, because Eric is planning to use the crockpot for some pulled pork tomorrow, and then we’ll be having Thanksgiving dinner!
