Dark Chocolate Lemon Brownies

So apparently I’m not very good at keeping up with this blog thing. The beets from the last box were roasted and eaten in salads with goat cheese and walnuts exactly as planned. Eric did not like the beets so I ended up eating all 4 of them myself. They were pretty tiny though. All other contents of the box became snack items. Delicious!

I also baked some brownies that went to Apple last weekend. I used this brownie recipe from Baking Bites. I think the basic brownies will be my go to, they were so perfectly moist and brownie-like. But the best part was the subtle lemon frosting coated with completely unsweetened dark chocolate. Everyone who tried a lemon brownie just raved about it. And so easy to make!

We just got our next box of produce last night. I may or may not have put my old boxes out by 6:30pm and stalked the front door until 11pm when I went to bed. Sadly it did not arrive. We don’t know when it arrived because Eric forgot to check before he went to sleep despite the fuss I made about it all evening. This new box contains:
Carrots
Gypsy peppers
Baby bok choy
Green beans
Radishes
Fuji apples
Valencia oranges
Red bartlett pears
D’anjou pears

It filled up my fruit bowl! I love it! Most of this box is snackable, so that’s good. I’ll probably just steam the green beans for dinner one night. The radishes and baby bok choy will be my challenges this time around. I don’t know if I’m a fan of either one and I have no creative ideas for either one. I’d rather not treat them in the stereotypical ways if possible. And while the peppers will most likely get snacked, I’m considering doing some sort of rice or quinoa stuffed pepper with them.

So that’s our update! Hopefully I can remember to take some pictures of my food next time.
